Adventures in Pinteresting - Lemon Pepper Chicken Thighs

I'm a bit of a Pinterest addict and I regularly use it for inspiration for my weekly meal planning.

Yesterday, I realized I had some chicken thighs in the fridge that needed to be cooked and I had no time to cook them and no idea HOW to cook them.

So I went to Pinterest and typed "slow cooker chicken thighs". One of the first recipes that came up was this Lemon Pepper Chicken Thigh recipe. So I went with it.

This was possibly my biggest Pinterest success so far.





A couple of notes:

1) I didn't have oregano, so I just tossed in some parsley.
2) I've never used the slow cooker without fully submerging the meat. I was skeptical, but it works!
3) I almost didn't include lemon slices, but I went for it anyways. It made for an amazing presentation but it also really added to the taste. Definitely don't leave out the lemon slices!




The recipe called for cooking the thighs for 4 hours on high and it was right on the nose. I threw these in super quickly before heading out for Open House at my sons' school, and when we returned, dinner was ready. And the chicken was LITERALLY fall-off-the-bone tender and perfect. Absolutely, hands down, the best chicken I've ever cooked. 

Definitely a Pinterest Win!
